You walked in from the gardens a little before half past eleven and took the table nearest the old tower. Nielson Field opened in 1937; its two runways became Ayala Avenue and Paseo de Roxas, and the terminal you ate in — propeller-shaped from above, Art Deco all the way through — is the last piece of the airport still standing. Most first-timers order the eggs. You asked the team what wasn't on the menu, and they brought the Wagyu croquettes, a flight of three, then the mussaman curry with more heat than a Sunday deserves. Then the eggs.

An international menu of global classics from West to East, with off-menu intrigue: Wagyu croquettes, spicy mussaman curry. Nielson Field opened in 1937 and closed after the war; the tower stayed, and Makati grew up around it.
